I generally prefer the newer versions of Ubuntu and rarely have had any problems with new versions, but a lifetime of using Microsoft products has left me with a feeling of dread about any new version of software.
The only problems I've had were during the beta period. Everything has been fixed before the final release. For the time being I'm not seeing any shw stoppers, but I'm also running a contunually updated install from at least 2-3 weeks ago.
I haven't used 7.10 yet, but I'm sure it's fine to use. When linux distros release the next version, not a whole lot usually breaks. That much said, I have had issues when I tried the automatic upgrade from Ubuntu 6.10 to 7.04. I might suggest backing up important data and having an Ubuntu 7.10 install CD on standby when you do the upgrade. I plan on using the auto-installer myself later this week, but I'd rather be safe than sorry.
