Not sure what that means, but RoundCube is great. Install apache, install RoundCube.. and that's it really.
The VMWare mailserver_4.2 Appliance is a RoundCube server, with everything already installed and configured. All you have to do is start it up and access the configuration Web page. Isolation of the server from your main system is distinct advantage (and, it will run under anything you can run VMWare from)

The February presentation at SLUUG (St. Louis Unix UG) discussed a VMWare Appliance running BSD (not a problem, is it?). I tried it, and it looks pretty nice. Has a Web interface to control it. The search shows some other mail server appliances, too. Additional features are available with registration, but I think it's supposed to be basically usable with a free minimal install.

Most of the hackish folk in this group are capable of handling a basic mail server setup. Grab a good howto and the default install for your distro. Postfix or Sendmail are complex and opaque to tune, but most distros provide a good starting point.
You can configure either through webmin, so if your main objection is to command line operations that's an option.
Webmin will also handle squirrelmail setup.
I've looked some into this issue, especially something that would handle my families email and calendar needs. I focused on groupmail, and there are several that you may want to look at. I focused on Scalix, Citadel and Zimbra (wikipedia them all for more info). They were all pretty nice, and IIRC, Zimbra has a VMWare option, and Scalix has a LiveCd option.

Thinking a bit outside of your request, you might also consider using Google Apps (http://www.google.com/a). Google can host your domain and handle your email for you. I moved my domain to that a while ago and I've been very happy with it - running clamAV, SpamAssassin, Sendmail, etc was a pain.
Google Apps is very simple, and allows you to set up workgroup support functions all in one spot (mail, calendaring, docs, spreadsheets, etc). It's basically all of Google's tools but using your domain name and allows you to manage users and permissions. Fun stuff.
